
BBQ Baked Chicken with Rice and Corn Pilaf
A simple meal using pantry staples of bbq sauce and rice! This recipe is foul-proof and easy to make. Minimal prep is the name of the game and dinner is ready in about 40 minutes.

Part 1 – Let's Prep and Cook
- Preheat oven to 400° degrees
- Slice onions and place onto baking dish.
- Season chicken and pour on oil. Rub in and make sure all sides are coated. Sprinkle more seasoning if needed. Layer ontop onions.
- Cover with foil and bake 25 minutes
Take a Quick 5 Minute Break
- Take a breath. It's been a long day and you're most likely multi-tasking!
Part 2 -Side Dish and Finishing Up
- Pour chili oil in saucepan (or 1/4 tsp red pepper flakes plus oil)
- Add rice and minced garlic and toast for about 3 to 5 minutes. Be careful not to burn.
- Add in water, corn and seasoning
- Pop on the saucepan lid, reduce the heat and let the rice do its thang!
- After 25 minutes, remove chicken from oven. Remove foil and brush or pour bbq sauce into chicken. Place back into ove.
- After 7 minutes, take chicken out, turn and sauce up the other side. Place back in oven.
- Check on rice. It should be done. Unlid and fluff the rice.
- A few minutes after fluffing the rice, take chicken out of oven
- Plate and eat up! Be sure to spoon some of the onion over the chicken.
