BBQ Baked Chicken with Rice and Corn Pilaf

A simple meal using pantry staples of bbq sauce and rice! This recipe is foul-proof and easy to make. Minimal prep is the name of the game and dinner is ready in about 40 minutes.

Ingredients
  

BBQ Baked Chicken
  • 6 Pieces Drumsticks
  • 1/2 tbsp Olive Oil
  • 1 tbsp Brown Sugar Garlic Seasoning Don't have this? That's ok. Mix 1/2 tbsp brown sugar with 1/2 tbsp garlic powder with 1/2 tspn each if onion powder, paprika and Italian seasoning.
  • 3/4 Cup Your favorite bbq sauce I used brown sugar bbq sauce
Rice and Corn Pilaf
  • 1 Cup White Basmati Rice
  • 1 Cup Sweet Corn I used half a bag of frozen corn
  • 1/2 tbsp Chili oil Sub red pepper flakes + a neutral oil
  • 1 tsp Minced garlic
  • 1/2 tsp Caramelized Onion Butter Seasoning If you don't have this seasoning (if not buy it– it's sooo soo good), sub in onion powder and a dash of parsley. Once rice is done, finish with butter.

Equipment

  • 1 Casserole or Baking Dish
  • 1 Saucepan

Method
 

Part 1 – Let's Prep and Cook
  1. Preheat oven to 400° degrees
  2. Slice onions and place onto baking dish.
  3. Season chicken and pour on oil. Rub in and make sure all sides are coated. Sprinkle more seasoning if needed. Layer ontop onions.
  4. Cover with foil and bake 25 minutes
Take a Quick 5 Minute Break
  1. Take a breath. It's been a long day and you're most likely multi-tasking!
Part 2 -Side Dish and Finishing Up
  1. Pour chili oil in saucepan (or 1/4 tsp red pepper flakes plus oil)
  2. Add rice and minced garlic and toast for about 3 to 5 minutes. Be careful not to burn.
  3. Add in water, corn and seasoning
  4. Pop on the saucepan lid, reduce the heat and let the rice do its thang!
  5. After 25 minutes, remove chicken from oven. Remove foil and brush or pour bbq sauce into chicken. Place back into ove.
  6. After 7 minutes, take chicken out, turn and sauce up the other side. Place back in oven.
  7. Check on rice. It should be done. Unlid and fluff the rice.
  8. A few minutes after fluffing the rice, take chicken out of oven
  9. Plate and eat up! Be sure to spoon some of the onion over the chicken.
