Candied Maple Bacon and Grilled Chicken Cesaer Salad

An easy, ready in 30 minutes dinner with a twist! Candied bacon! Just tell the kids it's a candy salad. That will get them to eat their veggies, haha! This ain't your grandmother's cesaer salad.

Ingredients
  

  • Caesar Salad Kit
  • Shaved Parmesan cheese to top salad – optional but highly recommend because what's a cesaer salad with no parm? 🙃
Candied Maple Bacon Bits
  • 4 slices of favorite bacon I used Aldi branded turkey bacon. No matter the meat variety, use uncured or thick sliced bacon
  • ¼ tsp onion powder
  • ¼ tsp cayenne pepper use less for less heat
  • Spoonful of brown sugar
  • ½ tbsp maple syrup
Grilled Chicken
  • 4 chicken thighs
  • Kinder Brown Butter Roasted Garlic. About ¼ tsp seasoning per chicken thigh. Alternatively, season with salt, pepper and garlic powder works!
  • Olive oil

Method
 

Minutes 0 to 3:
  1. Take out all the ingredients! Its time to do battle….I mean cook.
Minutes 4 to 20:
  1. Pat chicken dry and sprinkle seasoning on both sides. Drizzle olive oil (about ¼ tsp) on chicken thighs. Press/Massage seasoning and oil into chicken. Set aside to prepare the skillet.
  2. While chicken is resting and soaking up the seasoning, prepare the skillet by turning a stove burner on medium high heat. Once heated, coat the skillet with a drizzle of olive oil.
  3. Place chicken into pan. Hear the sizzle and do a little dance!
  4. While chicken is cooking, take bacon and chop into bits. I used a kitchen knife and cut up into bits. Set aside and pull out a small pan or skillet as we all as a sheet of Parchment paper.
Minutes 21 to 35:
  1. Check chicken. After prepping the bacon, the chicken should be just about ready to flip.
  2. Over medium heat, put bacon bits in small pan or skillet. If using turkey bacon, drop in a dash of olive oil. Periodically stir.
  3. Once bacon bits start to crisp, add in brown sugar mixture. Be sure to watch as you don’t want the sugar to burn. Stir and after 3 to 5 minutes, remove and place bacon bits on Parchment paper (or another non stick surface) to cool.
  4. Check chicken. It should be done or just about done. Remove chicken from heat and allow it to rest (about 5 minutes).
  5. While chicken is resting and bacon bits are cooling, prepare the casaer salad kit.
  6. Once the salad is mixed together, slice the chicken.
Assemble the Salad
  1. Add lettuce to a plate or bowl then top with desired amount of chicken and then finish with a sprinkle of the Candied Bacon and Parmesan cheese
