BBQ Chicken Quesadilla with Avocado Onion Salad

Ingredients
  

Quesadilla
  • 1 Pack pulled bbq Chicken
  • 6 to 7 slices of Cheddar Cheese or about 1/4 cup shredded per quesadilla
  • 6 to 7 flour tortillas
Avocado Onion Salad
  • 1 Avocado
  • 1/2 red onion
  • Salt/pepper/garlic seasoning mix. Season to taste
  • 1/4 cup olive oil
  • 1/2 tbsp honey
  • 1 tbsp red wine vinegar
  • 1/2 tbsp sour orange or equal parts lime + orange juice

Method
 

Prepare Salad
  1. Slice red onion and place in hot water. This helps to dial down the bite red onions have.
  2. In a small mixing bowl, add all salad ingredients except Avocado and Red Onion. Mix and taste. Adjust seasoning if needed/desired.
  3. Cut open and dice the Avocado. Drop i to bowl. Next, add red onions (jut the onions, not water they were in).
  4. Mix contents in bowl.
  5. Set in refrigerator.
Make Quesadillas
  1. Cook pulled chicken in microwave accordingbto package directions
  2. Heat a skillet over medium high heat. Drizzle/spray with Avocado oil.
  3. Bbq Chicken should now be done.
  4. Place as much chicken as desired onto upper half portion of tortilla. Add a piec of cheese.
  5. Fild bottom half over top half of tortilla.
  6. Place in pan and voom for about 4 minutes each side. To help tortillas stay closed, I placed a smaller size lid over the tortillas.
  7. Remove once finished.
  8. Remove salad from refrigerator.
Plate up and enjoy!
