
Orange Garlic Salmon with Green Beans and Rice
Oven baked, tender salmon served with green beans and rice.

Method
- Prep the salmon: Begin by creating sauce. Mix together orange marmalade, garlic, hot sauce and olive oil. Set aside. Turn on oven to 400 degrees F.
- Prep the pan: Place onions at bottom of casserole dish. I placed Parchment paper down first. Place salmon over onions, skin side down. Generously season top of salmon with pepper/salt/garlic mix.
- Spread orange sauce over salmon and then place in oven.
- Cook rice according to package. See notes on how I prepared my rice.
- Open green beans and dump contents (including )into a pot with butter and seasoning of choice. Cook until liquid is almost evaporated; about 15 minutes.
- Finish up: After about 25 minutes, ththe salmon should be done. Remove oven. Serve with rice and green beans.

Notes
Instead of instant rice, to jazz it up, toast jasmine rice in a saucepan with about 1 tsp of olive oil and 1 tsp of garlic. Toast for about 5 minutes. Be sure to watch so that the rice doesn’t burn. Next, add in chicken stock (i stead of water). Use the amount based on the number of servings of rice. Lower heat, cover and let summer until done. Once done, remove from heat, fluff rice and add 1/2 tbsp butter.
