We Survived Another Weel of Motherhood!

Phew! Momma, we made it to Friday. It’s been a week of spilled coffee, lost shoes, and mountains of laundry, but look at us still standing (okay, slightly wobbly) and ready to tackle dinner. That’s right, it’s time for Edition 008 of 3 Dinners for $35 – our weekly attempt to save sanity and our budget. The plan? Three tasty, family-approved dinners for around thirty-five bucks, using overlapping ingredients from our beloved Aldi. Because if Aldi has taught me one thing, it’s that you can feed a family of four for pennies (and still splurge on wine).

This week’s menu lineup is a real crowd-pleaser:

-Spicy McChicken Copycat

– Vodka Rigatoni with Roasted Brussels Sprouts

– Beef and Broccoli

Now let me give you the juicy deets on each meal:

Spicy McChicken Copycat

Imagine sneaking into the McDonald’s drive-thru wearing sweatpants, only to remember you have a perfectly good air-fryer at home. Voila, the Spicy McChicken Copycat! It’s crispy, well-seasoned chicken patties with just the right kick, tucked into soft buns with shredded lettuce and a finger licking good honey mustard sauce. Plus, theres cheddar cheese bevause I will never say no to cheese.  No drive-thru line and no parking debacle.

Vodka Rigatoni with Roasted Brussels Sprouts

Next up is the fancy mom dinner that might earn me mom-of-the-year points: Vodka Rigatoni with Crispy Roasted Brussels Sprouts. Yes, vodka but relax, it cooks off. I typically put in a splash of cream, and a hefty pinch of red pepper flakes into the pot and let it simmer, turning the kitchen into a mini trattoria. Meanwhile, the Brussels sprouts get a makeover: first steamed in the microwave (cutting cooking time) and then put in the oven and  drizzled with olive oil and onion powder, and roasted to crispy perfection. The whole house smells amazing. To my frlight, the little minions (I mean kids) eat them!

Beef and Broccoli

Finally, our budget-friendly take on Chinese takeout: Beef and Broccoli. Shaved beef, snappy broccoli florets, and a glossy sweet-savory sauce that screams “weeknight winner” with every bite. I stir-fry it up in one pan (hello, quick cleanup ) with garlic, soy, a dash of ginger, and a secret sprinkle of brown sugar that’s totally not as healthy as it sounds. The result? That silky sauce and tender beef combo you usually pay $25 for on takeout apps (and it never arrives piping hot). Not tonight, Netflix and Chinese food. We’re enjoying this one at home (and with leftovers for lunch tomorrow, thank you very much).

All three dinners tip the scales around $31, thanks to Aldi deals and smart reuse of ingredients (one pack of chicken becomes two meals, endless pasta for the win, etc.). We’re basically financial ninjas at this point.
