
One Pan Garlic Cod with Asparagus and Grape Tomatoes

- Preheat oven to 425°F
- Prep the pan: Add 1 tbsp Olive oil, all minced garlic, grape tomatoes to pan and season (not too heavy handed. More of a medium drizzle). If you’re not scared of heat, also add red pepper flakes. Mix together.
- Add fish to pan: Place fish over and in between the tomatoes. Season both sides of the cod. I used Aldi’s butter garlic seasoning. If you don’t have, sprinkle garlic powder, salt, pepper and oregano.
- Place in oven and roast everything 10–12 minutes (depending on fish thickness).
- Prep the asparagus: Once the fish is in the oven, prep the asparagus. On a cutting board, place asparagus and trim about 1 inch of the ends.
- Drizzle with olive oil and season with salt and pepper.
- Next: Slice 1 tbsp into 4 pieces.
- Once fish hits 10 minutes, add the asparagus to the pan. Top each fish with a piece of butter. Return pan to oven and continue cooking for another 5 to 7 minutes. (Because the asparagus is thin, be careful not to overcook).
- Finish & serve: Sprinkle parsley and spoon some of the created sauce over the fish (it's delish!). Plate with rice and enjoy!
