Creamy Flounder with Roasted Potatoes and Carrots

Ingredients
  

Creamy Flounder
  • 1 lb Thawed Flounder or other mild white fish About 6 to 7 pieces
  • 2/3 cup Heavy Cream
  • 1/2 tbsp parsley
  • 1 tsp chili crunch (or red pepper flakes)
  • 1 tsp onion powder
  • 1 tsp lemon pepper seasoning
  • 1/2 lime juiced and cut up
  • 1 tbsp butter, sliced into 4 pieces
Roasted Potatoes and Carrots
  • 1 cup sliced and halved carrots 1 thick carrot or 2 smedium carrots
  • 1 cup quartered baby potatoes
  • 1 tsp kinder caramelized onion butter seasoning
  • 1/2 tsp cayenne pepper
  • 1 tsp thyme
  • drizzle olive oil

Method
 

  1. Preheat Oven to 400° F
Prepare Potatoes and Carrots
  1. Chop carrots and potatoes into similar size pieces. This wipp help the veggies cook evenly.
  2. Sprinkle seasoning and drizzle (about 1/2 tbsp) olive oil. Mix and taste the mixing utensil. If needed, add an additional dasdash of seasoning.
  3. Place in oven
Prepare the Fish
  1. Add heavy cream to pan followed by butter
  2. Season with parsley, onion powder, lemon pepper, cchili and lemon
  3. Season both sides of fish and place into pan
  4. Cover with foil and place in oven, joining the potatoes and carrots that have been baking for about 15 minutes so far.
  5. Remove foil after 12 to 15 minutes and continue to cook for 5 additional minutes.
Get Ready to Eat
  1. Check doneness on potatoes and carrots after baking for 30 minutes
  2. At this point, the fish should be done and bubbling. Remove from oven as well.
  3. Plate and enjoy!

Notes

Substitute for any other mild white fish. Be aure to adjust cook time accordingly.
Substitute for any vegetable you like. Grocery stores routinely have pre-packaged chopped veggies mixes. Another alternative if you want to stick to potatoes and carrots, grab a bag of diced potatoes and freshly chop up some carrots. With only one vegetable to chop, it shaves off some time!
