- Preheat Oven to 400° F
Prepare Potatoes and Carrots
- Chop carrots and potatoes into similar size pieces. This wipp help the veggies cook evenly.
- Sprinkle seasoning and drizzle (about 1/2 tbsp) olive oil. Mix and taste the mixing utensil. If needed, add an additional dasdash of seasoning.
- Place in oven
Prepare the Fish
- Add heavy cream to pan followed by butter
- Season with parsley, onion powder, lemon pepper, cchili and lemon
- Season both sides of fish and place into pan
- Cover with foil and place in oven, joining the potatoes and carrots that have been baking for about 15 minutes so far.
- Remove foil after 12 to 15 minutes and continue to cook for 5 additional minutes.
Get Ready to Eat
- Check doneness on potatoes and carrots after baking for 30 minutes
- At this point, the fish should be done and bubbling. Remove from oven as well.
- Plate and enjoy!
Notes
Substitute for any other mild white fish. Be aure to adjust cook time accordingly.
Substitute for any vegetable you like. Grocery stores routinely have pre-packaged chopped veggies mixes. Another alternative if you want to stick to potatoes and carrots, grab a bag of diced potatoes and freshly chop up some carrots. With only one vegetable to chop, it shaves off some time!
